What a super bank-holiday weekend!

Working 35 hour weeks and especially teaching primary school classes of children has made me appreciate how lovely it is to have an extended weekend. I have spent lots of time with my host family and have had the chance to relax a little before the week ahead.

When I clocked off teaching on Saturday lunchtime, I was keen to make the weekend as relaxing yet productive as I could. After kicking my Sunday off with a banana pancake stack, I spent the morning relaxing and reading and the afternoon playing with the children.

Today, after a morning of The Body Coach workouts (this morning I tried Full Body Fat Burning Home HIIT) I decided to try some food prep for the week. I chose to make some Courgette and Sweetcorn Fritters and my own variation of some energy balls.

For the energy balls, I mixed oats with peanut butter, raisins, sunflower seeds, chunks of dark chocolate and honey and then rolled them in the desiccated coconut.

This afternoon I went to the cinema to see the French version of Denial, Le Procès du Siècle which was really interesting. I am hoping to catch some more French films before the end of my time in Paris as it is such an easy way to keep my French up.

Now I am going to get prepared for another week at work, and brainstorm how I can play tour guide to my Mum when she comes to visit on Friday!
